A family-run brewery in mid Wales, started by James in 2017, making wild little beers and co-ferments. Seasonality, barrel ageing and mixed fermentation are the tools, everything is brewed and packaged in house, and the beers are vegan. They are in no hurry about any of it.
Wilderness make farmhouse style beers, ageing and souring in oak rather than chasing anything flashy. You'll find their beers in fresh, barrel aged, or soured varieties, including the Stones and Skins and Rise and Fall Series lines. Keeping things simple and unfiltered is the whole approach here - no unnecessary processing, just the beer as it comes out of the barrel.
