Genevieve and Jonny met in Bristol when Gen booked Jonny's blues and fuzz band for a Halloween gig, and they bonded over loud music and bitter beer. Trips to the Senne valley followed, geuze did its work, and plans for a spontaneous brewery were hatched. They now brew in Berkeley, Gloucestershire.
Mills Brewing, started in 2015 by Genevieve and Jonny Mills, do things the old-fashioned way: small batches, traditionally floor-malted grain and whole-leaf hops, all fermented in wooden barrels by local wild yeast and bacteria. Every beer is then bottle-conditioned slowly with that same local wild yeast. It's a hands-off, embrace-the-chaos approach; they say they welcome the lack of control during fermentation because of the flavours it can conjure that intervention never could. Proper wild ale territory.
