Founded in Dundee in December 2014 by Danny Cullen, a microbiologist, after he left a career in science; the brewery takes its name from the Law, the extinct volcano overlooking the city. Production began at an industrial unit in the West End in June 2016, producing hand-crafted, unfiltered, unpasteurised beers naturally carbonated through secondary fermentation, sold in can and cask.
Law Brewing Co grew out of a change of career; its founder left a 25-year research career in science back in December 2014, and the brewery proper followed in 2016. They describe themselves as the modernist craft beer of Scotland, and split their beers into named ranges: Icons of Scotland, a Local Range and a Lager Range. On the shelf that means everything from Cooncil Joose IPA and Iron-Broo to Straight to Helles Lager and Berliner Tart Lager.
