A blendery rather than a brewery, on a farm in rural north Hertfordshire. George and Charlie set it up in 2018 after years of being fascinated by spontaneous fermentation: wild yeast, no added cultures, and years in old French oak. The taproom opened in 2022 and runs at weekends.
Crossover Blendery is an independent blendery tucked away in rural North Hertfordshire, making spontaneously fermented beer shaped by time, fruit, oak and the changing seasons. Onyx is a wild golden ale with Kent peach, all ripe fruit and bright acidity over a soft, layered wild base. Bramble, Thorn & Briar brings deep hedgerow fruit, brambly and tannic; Honey Isle is soft, rounded and gently honeyed; and Mackerel Skies, barrel-aged, goes funky, complex and oak-led. Slow, patient brewing, built around whatever the season gives them.
