Gyle 59 brew at Sadborow Estate Yard in Thorncombe, West Dorset, with every beer built around flavour. They are lucky enough to have their own spring water supply, which lets the ingredients shine, and there is a beer garden plus the Fox and Owl Cellar on site.
Gyle 59 brew spring-fed, log-powered, propane-driven beers, deliberately left unfined and hazy: "we wish to keep all the flavour and goodness in the beer," as they put it. Hippie Pils is a 5% Dorset pilsner lagered for a minimum of 12 weeks, Flower Power a 4.3% hazy pale with a tropical, lemony hit, and Elderbeery Stout a 7.3% fruity stout cask-matured for over nine months. Down-to-earth, artisan brewing where they genuinely want you to notice what you're drinking.
