Coventry since 2015, and firmly a community operation: brew what excites us, build something Coventry can own, as they put it. Fourteen-odd core and seasonal beers with what they cheerfully call a hint of madness. They also run Dhillon's Spire Bar and The Sky Blue Tavern in the city.

Dhillon's Brewery began with a borrowed van, built to put the Midlands on the brewery map. Using traditional and modern brewing methods, the line-up spans lagers like the 6.2% Sky Blue Army and 4.0% Ghost Town, through to the 4.5% APA Fair Lady and the 6.2% Red Rebel IPA. They put out limited editions too, including Brew X, a 4.0% beer marking ten years of brewing.
